Fedtkager.

The melting moments is a specialty from the southern part of Denmark (Sønderjyland) near the German border and is a favorite at Christmas time in Denmark.

The recipe we have here is more then 50 years old.

This  Danish  Cookie is not made with butter, but is made with lard. Don't let that put you off, this is a delicious cookie there will melt in your mouth.

Fedtkager Recipe:

Yields 125 


500 g Lard

500 g Sugar

1     Egg White

750 g Flour

1    Teaspoon of Bi-carbonate of soda

20 g Cacao


DIRECTIONS:

With beater, beat the Lard and Sugar well and add Egg White gradually.

Sift Flour and Bi-carbonate of soda and add to the Lard and Sugar and mix dough well together.

Divide dough in two pieces and add the Cocoa to one piece.

Scale off at 500 g and roll out long, divide each 500 g piece in 35 pieces, see photo.

Roll to a ball and place on a baking tray lined with baking paper and push down with your thump lightly in the center.

Bake at 180⁰C 

Baking Time about 10-14 min.

Let them cool down a couple of minutes and then move the Fedtkager on to a cooling wire to cool down completely before storing in an airtight container.

Place some Fedtkager in an airtight jar or a cellophane bag and decorate with curling ribbon and a couple of Christmas stickers and give to your friends, co-workers, teachers, or your neighbour, they will love to get a little homemade gift for Christmas.
