Finnish Shortbread, known as Finsk Brød in Denmark.
Another delicious and easy to make, Danish Butter Cookie.
Yes, you cannot have to many cookies for the festive holiday, so get your kids involved and get your biscuit tins filled up and fill your home with the sweat aroma of Danish Butter Cookies.
Quite a few people in Denmark make homemade cookies up to Christmas, some bakeries in Denmark even sell ready to bake cookie dough, just to cut out and bake off in your own home.

Yield: 60 cookies
375 g
Flour
100 g Sugar
250 g Butter
For decorating:
50 g Hazelnuts (Flaked or crushed)
60 g Raw Sugar
1 Egg
Mix flour, sugar, and butter together. Do not overmix, just bring the dough together.
Roll out the Finnish Shortbread to about
1 cm thick 18 x 26 cm, the dough is easy to roll out between two pieces of baking
paper, place on baking paper and a chopping board and refrigerate for ½ an hour
to 1 hour.
Cut lengthwise in 4 pieces of 4.5 cm wide, see photo.
Then cut them in 1.5 cm wide
Brush with
egg (see tip about egg wash), sprinkle with crushed or sliced hazelnuts and raw
sugar.
Tray up on baking paper, leaving at least as much space between the cookies as
the cookies are wide.
Bake at 200°C
Baking Time about 12-15 min. to they are golden around the edge.
After baking let the Finsk Brød cool down on a cooling wire before putting them in an airtight container or cookie tin.
Tip: Ad a pinch of salt to the egg and whip the whole egg with a fork to mix the egg yolk and whites together and it will be easier to apply on the cookies with a brush.

Place some Finish Brød in an airtight jar or a cellophane bag and decorate with curling ribbon and a couple of Christmas stickers and give to your friends, co-workers, teachers, or your neighbour, they will love to get a little homemade gift for Christmas.
